Default Sweet Potato

Has anyone got an fantastic ideas as to what I can do with a sweet potato?

The only thing I have ever done is part boil and than roast. It is such a lovely vegetable and I would appreciate some help with it.

I always bake my sweet potato, in aluminum foil in the oven (or grill). You can also bake then mash them, melting a few marshmallows on top in the oven.

Default A lot of things

There are a lot of things you can do with sweet potatoes. The most important thing to remember is that they are very healthy and can be eaten like a baked potato. My dad used to back them and instead of butter he put molasess on it.

That sounds great, Farris!!

A lot of folks are not aware the the sweet potato has many of the elements of other 'root plants' but also packs a wallop in vitamin A, which is believed to be very beneficial to the eyes.

At this very moment I have none, but I can alway pop to the supermarket and buy as many as I need for your recepies!!!

I had no idea you could bake them, so I will give that a try next, It will be simple enough to do.

I also was wondering is their many dishes for sweet potatoes. I really know of very few myself.

  • Traditional Southern USA Sweet Potato Pie
  • 3 C.hot mashed sweet potatoes
  • 2 Tbs. butter
  • 2 C. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. nutmeg
  • 1 tsp. cinnamon
  • 3 eggs
  • 1 C. milk
  • 1 tsp. baking soda
  • 2 -8” unbaked pie shells, or 1- 10” unbaked pie shell


Directions
  1. Preheat oven to 375°
  2. In large bowl combine sweet potatoes and butter.
  3. Combine sugar, baking powder, nutmeg, and cinnamon, stir, and then add to the sweet potatoes.
  4. Beat eggs until frothy.
  5. Add soda to milk.
  6. Mix with electric mixer until smooth.
  7. Pour into unbaked pie shell.
  8. Bake 10 minutes at 400 degrees.
  9. Reduce heat to 300 and bake about 45 minutes
  10. We also add (optional) nuts or marshmallows (if desired) take care that marshmallows do NOT burn.(they are added on top) after pie has cooked for a while.

Bubble, there IS many dishes for sweet potatos. Also sweet potatos
are often used in other recipes, as well as, mashed and fried like
white potatoes.

My mother used to slice firm sweet potatoes thin and cook the "medallions? in butter. It's a nice change for baking them.
