The Sapphire Grill is located on restaurant row, next door to the famous "Lady and Sons" in a row of old historic buildings. Sapphire is in our opinion, the most elegant contemporary restaurant in the entire city, and has one of the most adventurous menus in the entire Southeastern United States. The atmosphere here fits the food. It is urbane, modern, smart, romantic and darkly sensuous.

The grill's menu is the creation of chef and owner, Christopher J.Nason. Chef Nason started his culinary career in Savannah, and opened Sapphire Grill in 1998. His cooking brings together fresh caught seafood, organic free-range meats, game, poultry, vegetables and herbs from local and regional farms to make what he calls "Fresh Market Cuisine".

A recent menu (*note: menus change often, these are they types of items the chef creates) featured appetizers like: Calamari (encrusted with benne seeds with a ginger and coriander pesto ponzu, spicy peanturs, fresh lime juice), Lobster Bisque (prepared in 3 parts: pickled tarragon sherry, lobster foam, lobster bacon), Hudson Valley Froie Gras (with sundried fruit brioche) and Tuna Mignon Appetizer (minature sliced #1 tuna steak with asparagus Cointreau sorbet, aged black vinegar reduction, poached pearl onions).

For entrees, the chef prepares items like: Lobster en Brioche (lobster, Meyer lemon mayonnaise, pea tendril salad, radish, heirloom tomato, Braised Lamb Shank (lamb shank serve with a vegetable grill, toasted pine nut potatoes, currant tomato gratinee, roasted garlic cracked corriander demi glace), Confit of Organic Suckling Pig with White Truffle (with caramelized baby root vegetables, pineapple sage shortbread, pineapple oil), Diver Scallops (Nantucket diver scallops encrusted with polenta, roasted Washington State mushrooms, golden tomato conumme, juliene of chilled lobster, red chili oil), Lamb Lollipops (lamb lollipops spiked with rosemary and shallots, golden potato sage pancakes, rutabaga puree, cranberry oil) and Grouper (local Black Grouper encrusted with benne seeds, vinegar spiked jasmine rice, melted leek + heirloom tomato broil, sweet soy, preserved lemon).

You can create your own meal by ordering from the grill and pairing your own choice of fish, poultry or meat with your own choice of sauces and side dishes. Some grill choices include: Colorado Free Roam Lambrack, Ashley Farms Chicken Breast, Aged New York Strip, Tuna Mignon, Wild King Salmon, Jumbo White Shrimp and others. Sauce choices include: Wasabi, Clemson Blue Cheese Tarragon Mustard, Jalapeno Tartar Sauce, Cracked Five Peppercorn Veal Demi Glaze, Toasted Garlic Veal Jus and others. Side dish choices include: Wok Seared Vegetables, Toasted Egg White with Mushroom, Arugula and Chevre Spiked Ginger Grits, Melted Heirloom Tomatoes and more.

Sapphire's wine list includes whites, reds, Chardonnays, Sauvignon Blancs, Sparkling Wines, Champagnes, Pinot Noirs, Zinfadels, Merlots, Cabernet Sauvignons, and Dessrt Wines from all over the world. They feature wines from: Oregon, California, France, Chile, Spain, Australia, Germany, Italy, South Africa and other countries. (vintages, countries of origin, and overall selection changes often due to availibility)

The Grill is open for dinner only 7 nights a week. They feature a full bar offering beer, wine, cocktails and martinis. They do offer private rooms for parties and banquets. They also offer a chef's tasting table (tasting menu, dinner). They do allow BYOB. (corkage fee applies) Reservations are highly recommended.
